Wide and shallow with gently sloping sides, this round, 10-inch pan is ideal for sautéing, braising, and cooking casseroles on the stovetop or in the oven (safe to 450 degrees F), and it goes handsomely to the table for serving. It comes with a domed stainless-steel lid to collect moisture and return it to food during cooking. Calphalon's Commercial Nonstick cookware is coated with an especially durable, multilayered nonstick material. (For long life, only plastic, nylon, and wood utensils are recommended.) The pan's matte-finish exterior is anodized for hardness and won't chip, crack, or peel. Polished cast-stainless-steel handles are multiriveted for durability, resist heating on the stovetop, and are large enough to accommodate oven mitts. Made of heavy-gauge aluminum, the pan cooks without hot spots or warping and carries a lifetime warranty against defects. --Fred Brack All-purpose pan. Use it for searing, browning and sauteing vegetables and meats as well as making the classic Spanish dish, paella. The two loop handles make for easier lifting, and the heavyweight, domed stainless steel lid prevents the moisture from escaping and allows heat to easily circulate. What sets it apart from other Calphalon lines is the LRS3 (Lifetime Release System), a multi-layer nonstick material that's internally reinforced for effortless release and easy cleaning. Oven safe to 450 degrees F. The stainless steel lid securely traps in juices as you cook. Each pan is made of a heavy-gauge aluminum, all-metal construction that provides superior cooking performance through even heat distribution.

22 Inch Double-Gauge Steel Paella Pan

22 Inch Double-Gauge Steel Paella Pan Review

22 Inch Double-Gauge Steel Paella Pan Feature

  • (Serves 12 people) Heavy-Duty
  • 22 inch / 55 cm
This pan will not fit in a normal oven. We recommend ordering a paella burner and tripod as well. Our "Pata Negra" pans are twice as thick and heavy as our normal steel pans. This helps maintain even heat and prevents warping that can occur in other pans. This pan will last you a lifetime! This size pan makes enough paella for a dinner of 12 people. It is the traditional steel paella pan used by Spaniards for centuries - except even higher quality. The pan bottom is dimpled in order to spread heat evenly. You can use this paella pan either on top of the stove or on an outdoor grill. As you use your steel paella pan it will become seasoned: changing color and absorbing more flavors as you continue to cook with it. After each use, treat the pan as you would any steel or cast iron pan: wash it by hand, then season it with a light film of oil to retard rust. Should any rust appear, merely wipe it off. Seasoning tip: If you coat the pan with olive oil and place it in a 350 F oven for two hours the process will help prevent rust.

20" Pata Negra Paella Pan (50 cm) Serves 6 to 10 people, depending on how thin or thick your layer of rice is (thinner is preferable but gives fewer servings). This size usually fits over two standard burners, but you'll need to rotate the pan during cooking. It works well on a grill. It won't fit in the oven. Pata Negra is a professional quality paella pan made from an extra-thick and heavy-duty grade of carbon steel (aka polished steel, or acero pulido). It's a good choice for restaurant kitchens, or for home cooks who expect to give their pan a good workout. As with any carbon steel pans, these pans requires a bit of care: you must dry the pan right after washing it and then rub the inside with a little vegetable oil to prevent rusting. Carbon Steel Paella Pan with Red Handles 16"

Carbon Steel Paella Pan with Red Handles 16" Review

Carbon Steel Paella Pan with Red Handles 16" Feature

  • Carbon steel paella pan with red handles.
  • Pan is 16 inches.
Sturdy and fast heating, yet thin and strong, this is the traditional pan of Spain. Traditional polished steel paella pans are the most popular choice for their great price, durability, and for their authentic flavor. Surprisingly, the raw-polished steel actually improves the flavor of what is being cooked inside! The raw steel traps the oil inside of its natural microscopic pores and gives you a wonderful crisp texture on the bottom layer of rice. Care for these pans just like you would cast-iron cookware; hand washing ensures a lifetime of performance.

These pans are always a great choice for flavor and value!
